Chef de Cuisine for The Ritz-Carlton, Marina del Rey
Drew Sayes, most recently restaurant sous chef at Four Seasons Hotel Chicago and previously chef de cuisine at The Ritz-Carlton, Dearborn, is the new chef de cuisine of the acclaimed Jer-ne Restaurant + Bar at The Ritz-Carlton, Marina del Rey. Chef Sayes' menu offers an unpretentious approach to California regional cuisine and will debut December 2006.
"I look forward to providing a menu with local ingredients at the peak of season in a comfortable and memorable way. I want to keep the food delicious, fun and interesting for our guests," says Sayes.
Chef Sayes' interest in the culinary arts began when he was a child growing up Michigan. He learned cooking techniques and recipes from watching urban gourmet televisions shows. After viewing the program, Sayes would re-create the menu for his family to enjoy. He also credits his mother for teaching him the essentials for creating memorable holiday dinners in the family kitchen.
Sayes' career in the culinary arts began as a cook for a small family owned Italian restaurant in Michigan. A few years later, Sayes enrolled in the Culinary Studies Institute located in Farmington Hills, MI, where he absorbed some of the culinary expertise and knowledge he possesses today. Sayes received numerous awards from the American Culinary Federation sanction competitions throughout Michigan.
Sayes embodies a strong passion for teaching and mentoring fellow members of the culinary field. While in Michigan, he mentored and coached students from his Alma Mater. Sayes would like the opportunity to pursue teaching culinary studies at the college level in his future.
